What does shi tai ye mean?

Shi - to recognize, knowledge (know how to play Shi Tai Ye, it's all in the mind)

Tai - form, attitude, state, condition (to hold a stable and clean shape for your stack)

Ye - grandfather, uncle, father, grandpa (associated with knowledge/wisdom I assume)

It may also mean Great Grandmaster in Shaolin martial arts terms.
